Made some fabulous food this afternoon.
Whole wheat pasta with sauce and home made meatballs.
For the meatballs, I took some ground beef and mixed with parmesan cheese, an egg, fresh chopped basil, boatload of fresh minced garlic, some dried basil, sea salt and fresh ground black pepper.
Browned the edges in a pan with a little olive oil, then put in the oven @ 400º for about 15 minutes.
Threw in some diced roma tomatoes in the sauce for a little extra lovin.
I’m not a huge fan of meatballs in general, but I believe these were the best I’ve ever had.
We often just have pasta with sauce (no meat) so the kids were like “Ehhh I don’t think I want any meatballs”. They quickly changed their mind after taste testing. ;)
